Barbecued Chilli Shrimp If using fresh shrimp, shell and devein them. Place them in a shallow dish. Pour the Mango Hot Sauce over the shrimp. Cover and leave to marinate for at least 4 hours, turning occasionally in the marinade.
Meanwhile soak 4 long wooden skewers in cold water for 1 hour. Light the barbecue coals 20 minutes before required, or preheat the broiler to medium hot. Drain the shrimp and reserve a little of the marinade. Thread the shrimp onto the skewers and brush with the marinade. Barbecue or broil, turning at least once, for 5 minutes until the shrimp turn pink. Serve garnished with salad leaves and lime twists.
