Nature Isle Chicken Salad

4 large chicken legs or preferred chicken parts
3 lbs of potato
3 large carrots
1 tbsp Sweet Mango Kissed Mustard
4 tbsp Nature Isle Caribbean Ranch Dressing
2 tbsp mayonnaise (optional)
1 small onion sliced
1 small onion grated
1 sprig of chive
Thyme
½ tsp clove powder or whole cloves
2 medium clove garlic (grated)
2 sprigs parsley
Salt, black pepper
2 tablespoons vinegar
Black pepper, salt



Cook potatoes and carrots in water with some salt to taste. Cool and dice. Wash and skin chicken legs. Place in a pan of water with vinegar for 5 minutes. Cook chicken with chive, sliced onion, black pepper, salt, clove, thyme and some garlic until tender barely covering with water. Cool, and cut up chicken into small pieces. In a large bowl mix potatoes, carrots, chicken, Sweet Mango Kissed Mustard, Nature Isle Ranch Dressing, mayonnaise, grated onions, garlic, black pepper and parsley together.
