Clean bass in fresh cold water; pat dry and place in large shallow container. Mix sherry, lemon juice, minced garlic, soy sauce, salt, and mango sauce. Pour over fish, cover and set aside in refrigerator for 1 hr. Flip over at least once. Remove fish from marinade, grill over hot coals for 10 to 15 minutes on each side. Baste with BBQ sauce several times while grilling. Place grilled fish on serving dish. Spread chutney on fish while still hot. [ back to fish recipes ] | |
