Grilled Breast of Duck with Mango Papaya Chutney

3-4 Duck Breast
¼ C. Extra Virgin Olive Oil
¼ C. Nature Isle Mango Papaya Chutney
¼ C. Chicken Stock
1 Bunch Parsley (Chopped)
Salt and Pepper
For the Duck:
Begin by oiling the Duck evenly and season generously with salt and pepper.
Place on a medium to high heat grill and grill skin side down 5-7 minutes.
Turn and grill for another 5 minutes.
Once Breast is cooked to desired doneness, remove from grill and allow to rest for another 5 minutes.
Slice into ½ inch to 1 inch slices and fan across desired serving plate.
Place the Chutney on top of the duck and garnish with parsley.
