Grilled Fish With Tropical Chutney |

In a bowl, stir together the oregano, thyme, sugar, salt, allspice and cayenne. Rub the mixture into the fish, cover and refrigerate for 1 hour. Heat a 9 inch grill pan over medium heat. Grill the fish until cooked through, turning the fish several times as it cooks, about 5 minutes per side. Transfer the fish to dinner plates and top each serving with a spoonful of the Chutney.
