Sweet Potato Ravioli with Spicy Saffron Sauce
A Chef Julius Recipe ..
2 large square fresh pasta sheets
2 cups leftover sweet potato (puree)
6-8 sage leaves (rolled and thinly sliced)
8 saffron threads
2 shallots (minced)
¼ cup mushrooms (minced)
¼cup roasted garlic minced
¼ cup Nature Isle Mango Pepper sauce
1cup chicken stock (cooked down to ½ cup)
1T unsalted butter
1T Gourmè Mist™ Extra Virgin Olive Oil Spray
Salt and pepper to taste

For Sauce;
Add butter and oil to a warm pan. Cook for 1 min.
Add saffron, shallots, mushrooms and garlic, cook for 5min
Add Mango Pepper Sauce, cook for 3 min and add chicken stock
Cook sauce for 7-10 min, add the sage and remove from heat.
For Pasta;
Lay each pasta sheet flat and cut into 4 long even pieces.
Spoon a small amount of the sweet potato puree on 2 of the cut pieces
Place another pasta sheet on top. Cut between the pasta sheets to make
individual ravioli.
Use a fork to press the edges and prevent the filling from leaking.
Gently place pasta in boiling salted water and cook until it floats. About 5 min
Remove with slotted spoon and place on serving dish
Lightly spoon the sauce over the pasta and garnish with sage
