Spicy Island Snapper

4 fillet of red snapper about 6 oz. each
salt and pepper
4 tbsp all-purpose flour
2 tbsp vegetable oil
1 cup Nature Isle Spicy Chutney
1 red bell pepper, cored and seeded and cut into strips
1 or 2 jalapeno chilies, seeded and cut into rings
1 cup chopped scallion
1 tbsp chopped fresh cilantro



Season the fish fillets with salt and pepper, then dust with the flour. Heat the oil in a skillet. Add the fillets and cook them quickly so that each side is lightly browned. Add the chutney, red pepper and chilies to the pan. Simmer over low heat, spooning the chutney over the fish. Continue simmering until the fish flakes easily. Put the fish onto serving plates, spooning chutney, red pepper strips, and chili rings over each piece. Garnish with scallions and cilantro.   [ back to fish recipes ]
