Sweet and Spicy Chicken

3 lb chicken breasts cut into 2 inch pieces
2 tbsp olive oil
1 onion finely chopped
2 scallions finely chopped
2 garlic cloves, crushed
1 fresh chili pepper, chopped
1/2 tsp brown sugar
1 tsp thyme
1 tsp basil
1 christopene peeled, seeded and chopped
1/4 lb okra, trimmed and chopped
1/2 cup Nature Isle mango Hot Sauce
14 oz can tomatoes drained and chopped
salt and freshly ground black pepper



Rinse the chicken pieces. Heat the oil in a large saucepan. Add the onion, scallions and garlic and cook over low heat for 5 minutes. Add the chicken and cook for a further 5 minutes to brown them. Stir in chili pepper, sugar, mango hot sauce, herbs and vegetables, and season to taste with salt and pepper. Pour in 1 and 1/4 cups cold water and bring to a boil then lower the heat and stirring occasionally, simmer, uncovered for 1 hour or until the chicken and the vegetables are cooked and the sauce has thickened. Serve with fresh bread,baked yams or steamed rice.   [ back to poultry recipes ]
