Nature Isle Yellowtail Snapper

2 lb fresh yellowtail snapper or swordfish steaks
1/2 cup extra virgin olive oil
2 tbsp Nature Isle Jerk Seasoning
Nature Isle Spicy Chutney
2 cups peeled, seeded tomatoes, coarsely chopped
1/2 cup red or purple onion, coarsely chopped
2 tbsp cilantro or parsley coarsely chopped
2 cloves garlic, minced
1 tsp lime or lemon juice



Brush fish fillets with a thin coat of oil and rub each with Nature Isle Jerk Seasoning. Place on a fish rack and grill over hot coals or broil in a very hot oven at 550oF (280oC) for about 4.5 minutes on each side. To serve: Arrange fish on plates. Spoon Nature Isle Spicy Chutney on each piece of fish. Serve with plain, boiled potatoes. Serves 4.   [ back to fish recipes ]
